Don’ts

· Avoid hitching alone. Hitchhiking sure is a free and fun way to move around but you are locking yourself with a stranger. So having someone with you is a safer bet.

· Do not flash the thumb in areas where there is no room to stop. Make sure they can see you from a long distance and there is space for them to stop and pick you.

· Never hitchhike at night. If you do then wear reflectors and hitch in well-lit areas.

· Don’t drink and hitch.

Dos

· Look clean and presentable. This will better your chances of getting a lift.

· Convey purpose. Travel with hiking backpacks. This will give the impression that you are trying to get somewhere. Without any baggage you may look an aimless traveller and less safe to pick up. Being surrounded by suitcases lessens the chances of getting a ride, too. Travel light.

· Carry your identity papers and phone number. This is essential when stopped by the police for enquiry.

· Advertise your destination on a cardboard. Write out the destination big and clear.

· Trust your instincts. If a car pulls up and something about it makes you feel uncomfortable, then decline politely.

· Leave clear tracks. Inform somebody where you are heading. Carry a mobile if possible. Note the number plate and text it to someone you know – just to be on the safe side.

When it’s the season to be jolly, who doesn’t like to feast on yummy homemade delicacies? Here are some lipsmacking recipes from our chefs you can indulge in!

GOLDEN DELIGHT (Rich Plum Cake)

Ingredients

Refined Flour: 130gm

Sugar: 140gm

Eggs: 120gm

Butter: 80gm

Ghee: 50gm

Honey: 20gm

Marmalade/mixed fruit jam: 20gm

Liquid glucose: 25gm

Stewed & soaked dry fruits with nuts: 550gm

Fresh fruit juice: 30gm

Caramel colour as required

Essence as required

Baking powder a pinch

Method of preparation:

Mix butter and ghee together, blend with sugar till creamy. Add the eggs one by one and beat for some time. Add all the other ingredients and flour and finally the fruits. Pour the mixture in the mould and bake the cake in an oven for about one and a half hours.

STUFFED WHOLE CHICKEN ROAST

Ingredients

De-boned chicken (skin on): 1 (900 gms)

Chicken mince: 350gm

Ginger garlic paste: 50gm

Garam masala, whole: 5gm

Saunf: 20gm

Chilly powder: 20gm

Turmeric powder: 5gm

Coriander powder: 20gm

Coconut oil: 150ml

Curry Leaves: A sprig

Salt as required

Sultana: 25gm

Cashewnuts: 25gm

Green chilly, chopped: 20gm

Bread crumbs: 100gm

Garam masala powder: 5gm

Vinegar: 1 tbsp

Method of preparation:

Dry roast half the quantity of spices with a little coconut oil, marinate the chicken in this and keep aside.

For the stuffing:

Heat oil in a pan and add whole garam masala, ginger garlic paste and chopped onions. Fry till light brown. Add all dry spices and roast well. Add chicken mince, vinegar and salt. Stir and cook till done. Remove from the fire and allow to cool. Mix bread crumbs, sultanas and cashew nuts with the mince. Stuff the chicken with this mixture and secure to bamboo sticks with thread. Roast the stuffed chicken in a hot oven for about 45 minutes. Make gravy from the roast pan and serve hot.

The astounding success of the Kerala Travel Mart is now going places! “Kerala Travel Mart is a biennial tourism. Hence a road show would be the best way to utilise the time between the two KTMs,” says Riaz Ahmed, MD of ABAD Hotels & Resorts and KTM president.

Kerala's backwaters are a preferred tourist pick

The Kerala Travel Mart society plans to organise its next road show in some of the important cities of South Africa like Cape Town and Johannesburg. Numerous road shows have been organised by the KTM in Dubai, Saudi Arabia and Muscat earlier with government support. “There is great potential in the people of South Africa. Also there are a number of Indian origin people who have not got the chance to come to India,” explains Riaz Ahmed. "This is the reason we are planning for a road show there. An added impetus is the fact that Emirates has launched direct connectivity between Kerala and South Africa.”

When asked about the sixth edition of Kerala Travel Mart which was held in Bolgatty Palace, Kochi, he pointed out that it was a great success. In spite of the recession, there was 25% increase in the stalls when compared to last year. It surely was a great platform for the small players to exhibit their tourism products for the national as well as the international audience, he said.

This three-minute movie, which captures Kerala in its green glory, bountiful blues and earthy charm, has been directed by Prakash Varma (of Vodafone Zoozoo fame) and conceived by Kerala Tourism’s brand agency Stark Communications Ltd. It features upcoming international model Miriam Ilorah and is shot across the beautiful destinations of God’s Own Country like Thekkady, Munnar, Alappuzha, Thalassery and Kannur. The campaign showcases Kerala as an immensely popular tourist destination and aims to attract more travellers from all over the globe.

The campaign will be taken across the world to all the major markets of Kerala Tourism from October 2010 until mid 2011.

KTM-10 expected to be attended by 2,000 delegates!

Launched in 2000, Kerala Travel Mart (KTM), which has been quoted as the biggest ever travel event in India, is back this season. Starting on September 23, KTM-2010 is expected to be attended by over 2,000 delegates from 54 countries.

Riaz Ahmed, President of KTM, told reporters, “The record registration by the buyers from different countries, including Poland, Finland, Mexico and South Africa, shows the interest of buyers’ world over in the tourism sector of Kerala. A total of 551 international and 1,621 domestic buyers have registered for KTM-10. The United Kingdom has the highest number of participants for this mart.”

‘Athithi devo bhava’ will be the theme of the sixth edition of the biennial event. “The objective behind selecting the theme was that tourism was considered as an eternal rainbow connecting the countries, continents, people and above all the ‘athithi and athitheya’,” said Mr. Ahmed.

The Kerala Travel Mart is a platform for the buyers and sellers to interact. To make it more effective, KTM is introducing the concept of ‘speed networking’—enabling the participants to meet each other at least once for two-and-a-half minutes. Mr Ahmed said that though two or three minutes may not be enough to work out a business deal, it will surely be helpful to break the ice.

The event will be held from September 23-26 at the Bolgatty Palace Hotel at Bolgatty Island, Cochin. The buyers at the KTM include tour operators, travel agents, airlines, event managers, travel writers and media personnel, or anyone who has the potential to buy the services offered by the tourism industry. The last day of the mart (September 26) will be open to the public.

“Ramadan is the ninth month of the Islamic calendar, a month where Muslims fast throughout the day and eat only at night. The coming of the new moon marks the end of the Ramadan and Eid is celebrated the world over,” says Abdul Khaddar, sous chef of Abad Plaza. “Muslim homes bustle with activities like food preparation, prayers and celebrations during Eid. Great care is taken to prepare certain special dishes that are not eaten regularly.”

The day long fast is broken with a sip of water or lime juice, a few dates or some other fruits. This is followed by light snacks like unnakkai, samosa, cutlets and banana roast. Eid is celebrated with the preparation of special delicacies like patthiri, iddiappam, Shahi mutton biryani, beaf balls, mutton korma and meat kebabs.

“Unnakkai is a spindle shaped sweet dish made of banana (ethakai) filled with coconut and sugar originally made in the Malabar region of Kerala. The cotton seeds are called unnakkai in the Malabar regions and that’s how this sweet dessert gets it name and it looks spindle-shaped just like the cotton seed,” says Abdul Khaddar.

Irachi puttu is a special preparation during the festival of eid. “The main advantage of irachi puttu is that additional curries need not be prepared along with it. The puttu can be mixed with the gravy-like mouthwatering meat filling which is very filling and a nutritious punch for breakfast,” says Sunny, senior sous chef of Abad Plaza.

UNNAKKAI

Ingredients

Banana (half ripe): 2 nos
Sugar: 2 tsp
Raisins: 1 tsp
Chopped cashew nuts: 1 tsp
Ghee: 2 tsp
Grated coconut: ½

Method of preparation

Cut the banana into 2 or 3 pieces and steam well. Remove from fire. Remove the seeds. Grind the banana to a smooth dough by adding enough water. Keep aside.

For the stuffing: Heat ghee in a pan. Saute grated coconut, raisins and cashew nuts. Then add sugar and cardamom powder.

Grease your hand and make lime-sized balls of the banana dough. Flatten this ball on your palm into a small disc; fill the stuffing and roll with your hand. Heat oil and deep fry till golden brown and remove from fire. Serve hot.

IRACHI PUTTU

Ingredients
Rice flour: 500 gm
Minced boiled mutton: 250 gm
Onion (big): 2
Green chilli: 2
Ginger paste: ½ tsp
Garlic paste: 1 tsp
Coriander powder: 2 tsp
Chilli powder: ½ tsp
Turmeric powder: ¼ tsp
Garam masala powder: ¼ tsp
Coriander leaves: ½ bunch
Oil

Method of preparation:

Prepare the rice flour as for puttu. Cook minced meat with coriander powder, chilli powder, turmeric powder and salt till the meat is soft and water absorbed. Chop onion, green chillies and coriander leaves. Heat oil and sauté onion and chilli. Add ginger and garlic paste and fry for a while. Add minced coriander leaves and garam masala powder. Sauté for a few more seconds and remove form fire.

Boil water in a puttu vessel. Take a puttu kutti, sprinkle coconut, add a handful of prepared flour. Sprinkle a little irachi mixture over it and top it again with a handful of flour. Continue sprinkling alternative layers of flour and irachi mixture till the kutti is filled. Finish off with a layer of coconut. Keep it back on the puttu vessel and cover with lid. Cook till it steams. Remove kutti from the vessel. Place it slanted on a plate and push out the contents with a rolling pin into a plate. The delicious irachi puttu is ready to be served hot.

Stay healthy with vaccinations

1) Have a thorough check up to lessen the chances of an emergency treatment while overseas.

3) Take the required vaccinations 6 to 8 weeks before you leave.

4) Take precautions against getting bitten by mosquitoes. Wear long sleeves and trousers at night and also carry adequate amount of mosquito repellents.

Healthy eating

Eating healthy while travelling can be a daunting task if not planned well in advance. Food poisoning, diarrhea and consuming extra calories are some of problems a careless traveller may face. Grabbing a bit on the way is not always the best option.

2) Get your hands on some fresh fruits whenever possible.

3) Pack healthy non-perishable items with you like dried fruits, nuts etc.

4) Stick to your regular schedule while travelling. Skipping a meal will make you feel hungrier and you will end up over eating. This also increases the chances of falling sick.

Keep yourself dry

1) Select a good waterproof nylon backpack.

2) Also carry a nice rain jacket.

Kerala Travel Mart '10 in Kochi

The much-awaited tourism event Kerala Travel Mart (KTM) organised by the state’s tourism trade in association with the government will be held in Kochi over four days starting September 23. It is one of the tourism events which brings together the business fraternity, entrepreneurers, media and buyers under one roof.

The sixth edition of KTM 10 is all set to kick start with 370 stalls on September 23 with the inaugural function and the next three days with business activities at the Bolgatty Palace Hotel in Kochi. There will be over 400 international buyers from countries like Poland, Mexico, South Africa, Malaysia, Singapore, Germany, France, UK and many countries from South Asia. More than 1,500 buyers from in India will also participate.

This tourism event is chiefly a buyer-seller meet where the buyer profile would include tour operators, travel agents, airline, event managers, travel writers, media personnel or anyone who intends to buy the services and products that the tourism industry has to offer. Members of the KTM society are eligible to become the seller at the mart. Membership is opened to all tourism-related service providers in Kerala.

The fibre obtained from the husk (rough exterior shell) of the coconut is chiefly used to make coir. Once the fibre is harvested it goes through a process of retting where it is left to decay for a minimum of six months in huge pits along the backwaters. Once it decays, it is collected and woven into ropes on indigenous machines. These are then dried and meticulously crafted.

All work and no fun makes life dull and boring. A short vacation in the lap of nature is a magical experience for body, mind and soul. This is just what Sanjay Gopinath had in mind when he took a break from work and headed for Abad Whispering Palms with family.

"Yes, it was a long awaited vacation with the family. Aadi’s vacation was to get over soon and I needed a break badly from the endless interviews and one-on-ones. Kumarakom, the sleepy village around 70 km from Kochi city, was the solution. The roads are ok to drive on," he jots in his blog.

"The suite was backwater facing," he writes, explaining why the resort was the ideal spot for his dream vacation. "Stepping out of our suite through the rear door (which happened to be the one which we ended up using most!) we were welcomed by the water body. An occasional water fowl looking for insects used to visit us at the lawn which separated the room from the lake. My idea of vacation has come to mean rest and laziness and it was the perfect setting I could have asked for. Lazing at the verandah in the bamboo chair, with a book I picked up recently from the library, sipping the morning tea (for a change not made by me), facing the morning breeze is the ideal setting I wanted."

"Life is at slow pace there steadily throughout the day," he goes on. "A far cry from our maddening days which accelerate from the time you wake up till you hit the bed again. I felt the resort was reasonably priced, maintained pretty well. I am a self-confessed fish aficionado (on the eating side, not on the rearing side). This makes me looking and constantly trying for newer (read tastier) varieties of fish dishes. I did not find much on this area in the resort menu. However the food was good except for this. The resort has other facilities like a swimming pool and an ayurvedic center. You can also avail a boat ride or else book your houseboat which will pick you up at the jetty. Another attraction I found there was a small lagoon exquisitely maintained. As daylight picks up the still waters covers itself with a green blanket arguably caused by the ecosystem it maintains there. You could spend enough time just sitting on one of the islands in that lagoon and doing nothing."
